Just the other day I made (for the first time) Pastalitos... Here is what I did... PASTALITOS!!! A Dominican Favorite!!! Dough: 4 cups flour 2 tsp salt 1 1/2 (approx.) water Mix the dough, then knead it into a smooth ball. I then took golf ball size pieces and rolled them out like a tortilla...but be careful, they will stick together!!! Filling: Chopped garlic (1-2 cloves or more if you like) 2 pounds ground beef (but any meat will do) lemon juice salt Chili powder (just enough for flavor, not enough for tacos) Optional: onions & peppers Brown meat with garlic & any other veggies (like onions & peppers), once cooked, drain fat. Then add lemon juice & chili powder and a few tablespoons of water. Get you deep fryer ready or heat your oil to 350 -375 degrees. Put meat inside dough (that is shaped like a 4-6 inch tortilla), seal the edges and crimp with a fork. Fry in deep fryer for 4-6 minutes or until golden. Let cool slightly and eat with you favorite sauce... Red or green salsa, guacamole, black bean and mango salsa, sour cream, what ever you taste buds desire!!! I got a bare bones recipe from my Domican/Puerto Rican friend (she just told me what she did) and from that I created my version. The are many variations out there... You can add chicken, pork, beef, venison and season it up the way you like. You can add any kind of veggie (or fruits) and get a different taste every time! I made the amount above and it fed my family of 9 (7 children and 2 adults)...we didn't have ANY left!!! You can probably cut that recipe in half for a smaller family. | |||||||

| Pocket French toast 2 sticks of butter 1cup of firmly packed brown sugar 1/2 cup maple syrup 1 loaf of sliced bread (any kind - I use cinnamon raisin) 2 cups canned or fresh fruit (drain well if canned - I use apple pie filling) 8 eggs beaten 3/4 cups sugar ( i don't use as much sugar you can adjust to your liking) 2 tsp cinnamon 2 cups heavy cream 2tsp vanilla powdered sugar If using canned fruit, dump it in a strainer. Heat 1 stick of butter with the brown sugar and the maple syrup in a microwave-safe bowl on HIGH for 2 1/2 minutes or in a pan on the stove, stirring constantly, until the butter is melted. Spray a 9x13-inch cake pan with cooking spray and pour the syrup mixture in the bottom. Lay out 12 slices of bread to make fruit sandwiches. Spread softened butter on one slice of bread. Top it with well-drained fruit cut in very thin slices. Spread butter on a second slice of bread and use it to cover the bread with the fruit. Cut this fruit sandwich in half and place it in the pan on top of the syrup mixture. Make 5 more sandwiches, cut them in half, and put them in the pan. You can crowd them a bit, but do not overlap the bread. Press the sandwiches down with a flat metal spatula. Squish that bread! Beat the eggs with the sugar and the cinnamon. Add the cream and the vanilla, mixing thoroughly. Pour this mixture over the bread in the pan. Cover the pan with plastic wrap or foil and let it stand out on the counter for a minimum of 20 minutes. (If you're having a fancy breakfast, you can also make this the night before and keep it in the refrigerator until it's time to bake it.) Preheat your oven to 350°F, rack in the center position. Take off the plastic wrap. Bake the Pocket French Toast at 350°F uncovered, for approximately 45 minutes, or until top has browned. Let the pan cool on a wire rack for at least 5 minutes. To serve: Sprinkle the top of the pan with powdered sugar before you carry it to the table. This will make it much prettier. Dish out the French Pocket French Toast with a metal spatula, and offer more syrup and butter for those who want it. A half sandwich is one serving.

| ![]() BROCCOLI - CHICKEN OMELETTE Ingredients: 1 cup all-purpose flour 3 large eggs 1 cup evaporated milk 1 head broccoli florets, chopped 2 pcs. Carrots, sliced into thin strips 2 cups boiled and shredded chicken breast liquid seasoning salt and pepper Procedure: Mix all the ingredients together, then drop a cupful of the batter into a flat bottomed skillet. Fry until brown. Best served with Ketchup or gravy.
