YuM! I was wondering when food would come up since part of being a mother is preparing delicious food for our dear sweet children... Here is my recipe for Tator Tot Casserole... Tator Tot Casserole Ingredients: 1-2 lbs. Ground beef crumbled & browned 2 cans cream of mushroom soup or 2 cups prepared brown gravy* 1 ½ cups milk (skip milk if you have prepare brown gravy) 2 cans green beans, drained American cheese, 6-8 slices 1 bag of tator tots Directions: Preheat oven to 350°F. Cover the bottom of a 13 x 9 inch baking dish with green beans. Mix the cooked ground beef, mushroom soup and milk together. Spread ground beef mixture over top of beans and top with cheese. Lay the tator tots on top of cheese in rows. Bake for 1 hour or until bubbly at 350° F. ![]() *I use the packages of brown gravy mix, and follow the directions to prepare. *For a dairy-free version (since my daughter is allergic) I use the brown gravy, & no milk, & no cheese...that is my daughter's casserole to the left. BTW...I am currently working on a cook book!

Okay...today is birthday day for my oldest daughter (8)... So I hopped online yesterday in search of a good vanilla cake recipe... I tried this one...it is AWESOME!!! Vanilla Cake 2 cups sugar 4 eggs 2-1/2 cups all-purpose flour 1 cup milk 3/4 cup vegetable oil 2-1/4 teaspoons baking powder 1 teaspoon vanilla Preheat oven to 350 degrees F (180 degrees C). Line two 9-inch (23-cm) round cake pans or one 9x13-inch (23 x 33 cm) rectangular baking pan with parchment paper. Grease the paper and the sides of the pan well. In a large mixing bowl, with an electric mixer, beat sugar and eggs together until slightly thickened, about 1 minute. Add flour, milk, oil, baking powder, and vanilla and beat for another minute, just until the batter is smooth and creamy. Don't overbeat. Pour batter into the prepared baking pan(s). Bake in preheated oven for 30 to 40 minutes or until the tops are golden and a toothpick poked into the center of the layer comes out clean. (A single rectangular pan will take longer to bake than two round ones.) Loosen the sides of the cake from the pan with a thin knife, then turn out onto a rack and peel off the paper. Let cool completely before covering with frosting, if desired. Servings: Two 9-inch (23-cm) round layers, or one 9- x 13-inch (23 x 33 cm) rectangular cake. ![]() ![]() For icing... I made 2 kinds... Chocolate Fudge Icing 1/2 cup sugar 1 stick butter 1/2 - 1 cup unsweetened cocoa powder dash of salt 1/4 cup milk (or soy/rice milk) Put everything in pan, cook on medium heat until it makes a syrup or until boiling. Let cool. Then add 2-4 cups powdered sugar using an electric mixer, if it gets too stiff...add some coffee or milk 1 T at a time until desired consistency is reached. Vanilla Icing 1 cup shortening 2 - 4 T butter/margarine dash of salt vanilla flavoring 3-5 cups powdered sugar milk or water (about 1/4 - 1/2 cup, I think) Use electric mixer and blend together shortening, butter, salt, vanilla and 2 cups powdered sugar. Alternate with powdered sugar & liquid until desired taste & consistency is reached. Blend on high to make light & fluffy. BTW...my children decorated the cake! After years of trying to make the perfectly decorated cake, I retired and gave my children the privilege to decorate the cake. They LOVE this task! Here's a meat dish, but I don't have a picture of it, so let's just use our imagination okay? I just invented this one: Beef and Beans Stir-fryI usually do this when I'm pressed for time, you can substitute beef with chicken or pork if you want to finish faster. Ingredients: Beef sirloin , 1/2 kilo or 500 grams ( if you will use other cuts of meat, be sure to slice them thinly) Soy sauce, 3 tbsps. Worcestershire sauce, 1 tbsp. Hotdogs, 5 pieces , sliced diagonally ( sausage will do) Carrots, medium, sliced, 5 pieces Potatoes, medium , sliced, 4 pieces Cabbage, medium, sliced into strips, 1 round piece Mustard Tomato Ketchup, 2 tbsps. Cooked Beans, 1 can Salt and Pepper to Taste water, 1/2 cup Procedure: Season the meat with soy sauce, worcestershire sauce, salt and pepper. Let stand for at least five minutes. Fry the meat slices, hotdogs, then add the potatoes. Add the carrots, then season with mustard and ketchup. Add the cabbage strips. When the meat and vegetables are cooked, pour in the canned beans. Add water, salt and pepper to taste, let simmer for another five minutes until cooked. Makes up to 8 servings.

OOOOHHHH!!!! YUM!!! I have another meat dish... Easy as ...pie, but that's not exactly easy... So here goes... Even a young person can do this one: Grilled or Baked Lemon Chicken ·8 Split Chicken Breasts without bone & skin (can be frozen) ·1/2 cup lemon juice or more ·McCormick Grillmates Steak Seasoning or garlic salt, lemon pepper, or just salt & pepper This can be made two ways! 1. Place chicken in a baking dish sprayed with cooking spray. Pour lemon juice over chicken & sprinkle with grill seasoning. Then bake for 30-40 minutes at 350° or until cooked through. If you don’t have any time to defrost your chicken, bake it from frozen! Just make it the exact same way and bake for about an hour to an hour and a half! OR 2. Marinate chicken in lemon juice and grill seasoning for 4 -10 hours & grill. Grill for approximately 25 - 35 minutes, flipping every 5 minutes.
